33 Cookin' Cowgirls

BURRITO PIE


1 (20-oz.) Pkg. frozen chopped broccoli
2 c. Cooked rice
2 c. Fresh bread crumbs
6 T. Butter or margarine
3 T. Flour

1/4 tsp. Pepper
1 1/2 lbs. Cooked ham
3 c. Milk, warmed
Shredded cheddar or swiss cheese
Cook broccoli according to package directions and drain well. Put rice into a greased
9 by 13 inch pan and top with broccoli.Melt 2 TBSP. butter and mix with bread
crumbs, set aside. In saucepan melt 4 TBSP. butter; add flour, salt and pepper. Stir
until bubbly and whisk in warm milk.Stir until sauce thickens.Remove from heat. Cut
ham into small pieces and place on top of broccoli. Pour sauce over. Sprinkle with
bread crumbs. Bake at 350 degrees for 30 minutes. Top with cheese and bake another
5 minutes. Let stand 5 minutes before serving.
REUBEN CASSEROLE


32 oz. jar of sauerkraut, rinsed and
drained (Bavarian kraut works great)
1 lb. cooked corned beef, coarsely chopped
1/2 c. chopped onion
1 (16-oz.) pkg. Swiss cheese, shredded

1 1/3 c. Thousand Island dressing
1 stick butter
2 tsp. caraway seeds
1/4 c. parsley
Preheat oven to 375° Combine kraut, onion, parsley, and caraway seeds. Spread
mixture evenly into greased baking dish. Layer with half of the cheese, half of the
dressing and all of the corned beef. Layer remaining cheese and dressing. Melt butter
in a large skillet and saute bread cubes. Sprinkle sauteed bread cubes on top of
casserole. Bake 35 minutes. Yields 8-10 servings.
ITALIAN SAUSAGE AND
SPINACH PIE


1 lb. chopped sweet Italian sausage
5 eggs shredded
1/2 T. salt
1/8 T. pepper
2 (10-oz.) pkgs. frozen chopped spinach,
thaw and drain well

1 (16-oz.) pkg. mozzarella cheese,
2/3 c. ricotta cheese
1/2 c. parmesan cheese
1/8 T. garlic powder
2 Pillsbury pie shells
Brown sausage. Drain. In a large bowl combine eggs with sausage, spinach, 3
cheeses, salt, pepper and garlic powder. Place pie shell in 9 inch pie plate, fill pastry
and cover with second shell. Cut slits in pastry top. Bake at 375° for 1 hour and 15
minutes or until pie is golden brown. Let stand 10 minutes before serving. Serve with
warm spaghetti sauce poured over each slice.
